Iberian Ham: AppearanceThe fat that covers the entire surface of the Iberian Bellota Ham is a yellow colour, which can be brighter in tone depending on how mature it is. The inside layers of fat should be white in colour with a light touch of yellow.

The mixture of tones precisely indicate the variety in tastes. A pinkish colouring to the fat indicates the high quality of the Iberian ham.
