THE AROMA
The olfactory quality of Iberian Bellota Ham (of acorn) is defined according to two factors: the intensity and that which is commonly referred to as the bellota jamón aroma.
The intensity Just like products such as wine and cheese, iberian ham must have strong aromas. A good quality ham emanates intense and pleasant aromas.
The bellota jamón aroma: This is a smell that has its own nature and personality and does not need to rely on any other fragrant reference. It is not found in any other jamón or meat product. It may be an unperceivable aroma to a novice but is unmistakable to an expert nose and is identifiable with time.
