THE TEXTURE
The two aspects to bear in mind with regard to the texture of an Iberian Bellota Ham are the firmness and fluidity of the fat.
The firmness of the fat: The Iberian pig has well-defined fat qualities that distinguish it from other races. The greatest quality is its increased softness as its fat is softer than any other jamón.
The fluidity of the fat: This depends on the infiltration of the fat. In hams produced from Iberian pigs it is more fluid due to the concentration of lipids.
