This knife is known as a "jamonero" knife. Boning knife The iberian ham must be prepared and cleaned before cutting. This is done using a hard-bladed sharp knife to remove the first piece in a single cut, along with the fat, and cut around the bony areas. * Knives and sharpening steels should be ordered at the same time as the jamón or jamonero (jamón fastener) as one cannot be used without the other. * Price valid only for Spain.
